Types of Fryers
Open-Pot

Flat-Bottom
Flat-bottom Commercial fryer is designed for cooking lightweight and delicate food that float near the surface of the oil, thereby reducing the chances of sediment contacting the item. This type doesn’t have a sediment zone, so they are not as suited for high volume job accomplished with “tube-type” and “open-pot” designs. A Flat-bottom fryer is good for tempura, tortilla chips, and taco shells. Funnel cake is also a good example that is ideal for this type of fryer.
Commercial Fryer Maintenance
The oil you use in your commercial fryer reduces in quality over time and should be replaced. The regularity which you need to replace the heating oil depends upon what you cook, how much you cook and how frequently you use it. To improve the quality of the heating oil and its lifespan, use a heating oil filtration system to filter out food bits and debris left from the fryer. It works by draining the oil from the fryer tank, circulating it through a filter, straining out unwanted particles, and returning the cleaned oil to the tank.
It’s also important to boil out fryers regularly to burn fat and carbon build-up off the heating elements and the tank. These build-up can become corrosive and can cause severe damage to the equipment. Be sure to clean the inside of the commercial fryer regularly as well, you may take this opportunity when it’s time you replace the heating oil.
