A Bain Marie, also known as a double boiler, is a kitchen equipment used to keep ingredients warm over a period of time. It is two pans stacked on top of one another. The bottom pan is filled with water and the top pan is placed with the food to be cooked by the steam. This equipment allows for gentle cooking, heating and storing of food to keep food nice and hot. This ensures that your ingredients neither become too hot too fast nor too much, which can cause them to break down and have their flavor badly affected. Other times you might want to work with something like melted chocolate for an extended period of time and not to worry about constantly adjusting the heat to ensure that it’s evenly melted. Bain Marie comes in a choice of wet heat and dry heat. Wet heat depends on hot water or steam for the cooking process, while dry heat uses electricity and a heating element between the pans.
HOW IT WORK
A Bain Marie, which can also be known as water baths, is a specific piece of kitchen equipment consisting of two fitted pans. The bottom pan is filled with 1 – 3 inches of water and the top pan fits above it and holds the ingredient that you’re cooking.
The pans are placed over a burner and heated until the water becomes hot enough to heat the ingredients to your preferred heat level. The water is heated and slowly and evenly transfers heat to the second pan. This also prevents the water from reaching boiling point due to the pressure that is made by the gap between the pans. Usually, you will want to get the water boiling for best results, then turn off the heat when your ingredients get to your desired temperature.
