These are a few important factors to consider before making a decision.
Four Main Types of Commercial Pizza Ovens
The four main types of commercial pizza ovens used to cook pizzas are brick ovens, deck ovens, conveyor ovens, and convection ovens. Generally, brick ovens offer the best quality pizza, the next best are the deck ovens, and finally, conveyor and convection ovens.
Brick Pizza Ovens
Brick pizza oven is like a fireplace that has a hearth and dome, which are made from refractory bricks. This traditional oven is fueled by wood, but you may also use gas and coal with this type of oven. This kitchen equipment are ideal for any pizzeria business that wants to serve authentic pizzas using traditional baking procedures. Brick pizza ovens use three heating methods: the convection, reflective and conductive method. The dome interior creates a natural airflow for convection heat and the heat is also reflected off of the dome back to the pizza, then the stone hearth conducts heat to the crust. Its preheat time can range up to 45 minutes – 1 hour. Most commercial units will come with temperature readout, but you can also use an infrared thermometer to check the temperature. When the temperature is in the correct range, it can take between 1.5 – 5 minutes to cook a pizza, depending on the pizza’s thickness and the volume that is being cooked at once. Each pizza being cooked will absorb some of the heat from the stone hearth, but if the fire is well maintained, it should only take a few minutes for the oven to replace any absorbed heat.
Pizza Deck Ovens
Deck Ovens feature stone decks on which the dough is directly placed to bake. This type of Pizza Oven are the next best thing to a Brick Ovens. They are ideal for pizzerias that want to serve a more authentic-tasting menus without having to invest the time or money in buying and maintaining a brick pizza oven. This type of commercial Oven can use either gas or electricity to heat the stones. Each pizza stone is heated by a burner, so the hot stone is what cooks the dough. The chamber will heat up too, so the cheese and toppings are cooked with the heat. Beginning with a cold deck, a Deck Ovens will take about an hour to reach the proper temperature for cooking. At 500 degrees Fahrenheit, a single pizza will cook in 6 – 8 minutes to cook a pizza, depending on the pizza’s thickness and toppings.
Pizza Convection Ovens
Today’s economy, with rising utility costs and expenses, all restaurants are looking for methods to save time and money. This type of Kitchen Equipment decreases both cooking time and energy use while creating pizzas that are as good as made by traditional methods. Both gas and electric models are available. These pizza ovens have a fan in the back portion that circulates hot air for convection heating. It cooks at 460 degrees Fahrenheit, which is a lower temperature compared to other types. The convection heat means a lower temperature is needed and helps save on energy costs. The unit will heat up to the necessary cooking temperature in 15 – 20 minutes. These type has perforated metal shelves that help increase cooking efficiency and decrease heat recovery time.
Pizza Conveyor Ovens
Pizza Conveyor ovens are one of the slower units for making a pizza. The pizza is pulled through the cooking chamber on a chain conveyor belt. Although this method is slower, you can also cook more than pizza in a conveyor oven. Pizza Conveyor Ovens use gas or electricity. On gas units, you will still need a power outlet to operate the conveyor and controls. These units are ideal for small-scale pizzerias that do not experience a lot of orders. You can also use it to seer fish, toast sandwiches, or bake pretty much anything that will fit inside. Countertop units will use radiant heat, while full-size units employ forced air for even heating. The ideal temperature for a pizza to be cooked in a conveyor oven is between 400 – 600 degrees Fahrenheit. There are no stone decks to heat up, so this type of pizza oven has nearly no preheat time. Since pizzas are passing under the forced air or radiant heating elements, little or not any heat is really lost, so there is no heat recovery time either. You can have a continuous stream of pizzas going through this oven.
